Pumpkin Sausage Stew



Ciao!! I don’t know about you, but my favorite season is winter. I know it seems odd, since it can get very cold and snowy, but I just love it. I love what it signifies.  I think of Halloween, which is usually spent dressed up in front of the TV watching the parade, Charlie Brown and eating candy. Thanksgiving, spent at our wonderful friends house (which also means bake-athon, I’ll explain closer!!) and our annual Christmas Eve Party. When I think of winter, I think of happy times spent with the people that I love. And, ahem, the food.

It’s hard not to think about all the yummy food when the holidays roll around, right? Well, the other night in New York, it was really chilly out. And I don’t know about you, but on a chilly night, I need some serious comfort food. I need a big bowl of something warm and fragrant. And this Pumpkin Sausage Stew is just perfect.
The stew is filled with garlic, onions, pumpkin and hot Italian sausage. The contrast between the sweet, creamy pumpkin, rich and flavorful garlic and hot Italian sausage is just amazing. It’s a wonderful combination that will drive your taste buds wild!!

As I mentioned when I made my Pumpkin Gnocchi, I purchased a cheese pumpkin from Fresh Direct that was so big, I still have some of the puree in my freezer!! But that’s okay with me, I love eating as much pumpkin as I can when they’re in season. Plus, pumpkin is very healthy. It’s packed with antioxidants including alpha-carotene and beta-carotene, they’re high in fiber, low in calories and fat and they’re an excellent source of vitamins and minerals such as vitamin C and E, magnesium, potassium and iron. So if this doesn't convince you to eat a lot of pumpkin, I don’t know what will!! Let me know how you like it!!

Pumpkin Sausage Stew

3 tbsp. olive oil
 1 ½ pounds of Italian sausage links- hot or sweet, I prefer hot!
4 cups cubed pumpkin
5 cloves of garlic, minced
3 cups chicken stock
Black Pepper
Salt
Fresh thyme
2-3 fresh sage leaves
1 bag of pearl onions

Brown your sausage links in a large stew pot over low to medium heat. Brown on all sides for around 10 minutes. Remove and put on a plate. Toss pumpkin cubes with salt and pepper and lightly brown them for about 2-3 minutes, remove to another plate. Add chopped garlic, cook for 5 minutes, do not let it burn. Put your sausage back in the pot; add your stock, more black pepper, salt, thyme and sage leaves. Cover your pot. Place in your oven on 350 degrees for one hour. After an hour or so, add your browned pumpkin. Continue baking, after around 15 minutes, add your peeled onions. Cover and let cook for an additional 15 minutes (start checking after 10 minutes, everyone’s oven is slightly different.) When the vegetables are softened, remove the cover, let brown around 15 minutes, test for seasonings. I like to serve my stew over garlic mashed potatoes. Having a spoonful of the pumpkin, sausage and potatoes at the same time is just incredible. Buon Appetito!!

Spaghetti Sausage Pie


Ciao a tutti! Last night I knew I felt like making dinner but I wasn’t quite sure what to prepare. I looked through my refrigerator and it hit me! I had fresh eggs, sausage, parsley, garlic, ricotta and parmigiana, so…..Spaghetti Sausage Pie!! If you are familiar with the Food Network show “Chopped” you know that the premise of the show is to build a dish out of four ingredients in the mystery basket. Now, I don’t have a lot of the unusual ingredients that they showcase, but I love challenging myself and trying to figure out what to prepare just by seeing what foods I have in the house.

I love Pasta Pies. The great thing about pasta pies is that you can pretty much do whatever you like with them. For one thing, if you have some leftover pasta from a previous dish and want to spice it up, you can easily add some ingredients to it and bake into a fresh and delicious pie. It is also a great dish served room temperature for a picnic and it travels very well for a party. Like I said, I had sausage, but you can also make it with chicken, beef or vegetables. I cook my pasta al dente because when it is mixed with the egg and cheese mixture it will naturally soften up a little, so when you cook your pasta make sure that it doesn’t get too soft. This way, when it is out of the oven, the inside will be just creamy enough with the cheese and the outside should have a light crunch.

I made this with whole wheat spaghetti; as I’ve said before, I do what I can to make my recipes a bit healthier. Obviously, I am not going to try to pass this dish off as healthy, but every little thing counts. I had a nice slice fresh out of the oven with a side of sautéed zucchini. Spaghetti Sausage Pie



2 tablespoons of olive oil
2 links of Italian sausage- hot or sweet, it’s up to you!
¾ cup of ricotta
½ cup of parmigiana
Salt
Pepper
Red pepper
Garlic-chopped
Parsley- chopped
2 eggs
½ a box of spaghetti

First, prepare a small pan with olive oil over medium heat and put the sausage in. Let it cook on each side for a few minutes. Once it has browned, flip to the other side, repeat flipping them every few minutes until they are fully cooked.

Start boiling a pot of water for your pasta and salt the water.

While the sausage is cooking, in a medium size bowl, mix ricotta, parmigiana, salt, pepper, red pepper, chopped garlic and parsley. All of the seasonings are to taste, so you can add as little or as much as you would like. In fact, what I like to do is try a little of cheese mix before I have added the eggs so I can see if it is well seasoned. Next, add the eggs and beat until thoroughly combined.

Once the sausage is done, let it cool for at least ten minutes. At this point, the water should be boiling so throw your pasta in. Spaghetti cooks very quickly, so stand by. While that is cooking, cut your sausage into slices and add to the cheese and egg mixture. Drain the pasta and run cool water it so it doesn’t instantly cook the eggs!!

I cook my pie in a traditional glass pie pan. You can also use a casserole dish if you like. Whatever you use, oil it so the pasta doesn’t stick. Heat your oven to 350 degrees. Add the pasta to the egg and cheese and stir. Put the pasta mix in your pan and into the oven, cook for 30-45 minutes. Everyone’s oven is different, so be sure to check in every few minutes. You don’t want the center soft and undercooked, but you don’t want it burnt. Once you the pie is done, let it sit for around fifteen minutes before serving. Serve with a nice side of sautéed vegetables or a fresh tomato and arugula salad. Buon Appetito!!

The Scents of Summer: Sausage and Peppers


If you have ever walked through a street fair during the hot days of summer, you are met with the lovely, various scents of all the food around you.  Zeppoles, funnel cake, falafel, cotton candy, corn on the cob. But nothing quite makes my mouth water like the aroma of sausage and peppers.  You know exactly what I’m talking about. The smell of the roasted peppers, the caramelized onions, the hot and spicy smell of the sausage. Pure perfection. Honestly, as silly as it may sound, that smell always makes me think of summer, usually because that’s when the street fairs are around.

So, this past weekend for dinner, I made a classic sausage and pepper stir-fry. Nothing fancy. No tricks up my sleeves. Just prepared the classic way. Some things don’t need a new twist and to me, this is a perfect example. It’s simply amazing the way it is. One of the great things about sausage and peppers is that it’s very easy to prepare, there’s not a lot of prep time and not a lot of steps. Another thing I love about sausage and peppers is how many different ways you can use it. Of course, the classic street fair style is served on a nice, toasted Italian hero. You can also have it with pasta, over polenta, a salad, on top of pizza, use it instead of Bolognese in lasagna. I’ve also been known to go a little nuts and add it to an omelet with some mozzarella or make an Italian quesadilla with some parmigiana and mozzarella. Anyway you have it, it’s delicious.

Sausage and Pepper Stir Fry


1/2 lb Italian Sausage (sweet or hot, whatever you prefer)
1 Red Bell pepper, sliced fine
1 green bell pepper, sliced fine
1/2 of 1 large red onion cut
2 cloves of garlic, minced
Vegetable oil, for stir frying
Salt and pepper (Quanto basta)

Heat the vegetable oil in a large skillet pan over medium-high heat, I recommend around 1-2 tablespoons of oil, since sausage is naturally pretty oily, you don’t need too much. When the oil begins to simmer, put the whole sausage in the pan. Continue cooking until sausage is browned on all sides and no longer pink in the center.

Drain sausage and let it cool for just a few minutes and then slice. I like thin slices, but you can obviously cut it the way that you like it. Add another tablespoon of vegetable oil to the pan and continue to heat. Add garlic and cook, make sure the garlic gets nicely roasted, but not burned. Put the sausage back in the pan. Add sliced peppers and onions and cook, stirring, until peppers are softened and onions are caramelized.

Season with salt and pepper and serve! Buon appetito!
